Healthy first birthday cake recipes

·         ·         This cake has no added sugar and the sweetness comes from banana and date purees.

·         The simple ingredients that you require for making this cake includes six eggs, 1/2 tsp baking powder, ¼ cup coconut oil, ¼ cup coconut flour, dates (six medjool dates), 3 to 4 bananas, ½ cup raspberries,1/2 tsp cinnamon, 1 cup frozen raspberries and 1 tbsp. chia seeds.

·         Put the dates in a food processor and allow it to form a paste. Add bananas and blend both the ingredients.

·         Always use soft dates so that they blend properly. If you wish, you can prefer to soak the dates in boiling water a few minutes before blending.

·         Add the oil and eggs into a mixing bowl, along with the fruit puree. Mix everything. The eggs are to maintain moisture and keep the product together.

·         Add the coconut flour and stir the mixture well. Allow the coconut flour to be in the liquid mixture for 10 minutes.

·         The coconut flour should absorb the liquid and the mixture should thicken.

·         Pour the mixture evenly into two greased pans. You can select the pan size and prepare accordingly. Ideally it should be 7” to 8” round pans.

 

Coconut Whipped Cream

To achieve a perfect consistency, follow the steps below:

·         Choose the right brand that is full of fat.

·         Allow the coconut cream to chill in the refrigerator overnight. The cream should harden and soft cream will not whip properly.

·         The coconut whipped cream can be stored for up to four hours before icing the cake. Put it in the refrigerator and ice the cake just before you serve.

·         Allow the cake layers to cool. Place one layer of cake on your cake stand and evenly cover it with chia jam and put the second layer. Spread the coconut whipped cream frosting over the top and sides. Decorate as you wish.

·         The cake layers can be stored in the refrigerator but the coconut whipped cream should be added just before you plan to serve. Chai Jam can be prepared ahead and stored in the refrigerator.
